These morning treats are perfect when you have to have breakfast on the run. Packed with protein and not sweet so you won’t have a sugar spike. They freeze well too!
Ingredients
- 2 bananas, sliced thinly
- 2 cups rolled oats
- ½ cup almond meal
- 1 teaspoon baking powder
- 2 teaspoons vanilla extract
- 1/3 cup almond butter
- ¼ cup raisins
- ¼ cup maple syrup
Directions
- Preheat oven to 350
- Place bananas in glass bowl with a tablespoon of water. Microwave for 1 minute. Set aside to cool. Mash.
- Place all ingredients in large bowl. Add more rolled oats if too wet. Mix well.
- Place by tablespoon on baking sheet lined with parchment paper. Bake for 12 minutes.
Makes about 40 cookies
